Mizithra & Brown Butter Spaghetti

This is one of my all time favorite meals - and it's super easy to make yourself! Mizithra cheese is pretty easy to find in the supermarket these days. Just check the specialty cheese section - usually located next to the deli.  Sprinkled on top of spaghetti with brown butter sauce and you're in business!

If you don't know how to make brown butter sauce, don't be intimidated. It's very simple - and the best part is that it's only one ingredient - butter! Here's how to make it:

Step 1
 Add butter (as much as you like) to a pan over medium heat and... wait.

Step 2
 As the butter melts, it will make lots of noise and bubble like crazy. Watch it VERY closely for the moment it stops and your butter looks like this - almost foamy.

Step 3
As soon as you've got your "foamy" butter, immediately remove it from the heat and gently swirl it around in the pan. Voila! Brown butter sauce!

Pour the sauce over your spaghetti noodles with some mizithra cheese and mix well. Prepare yourself a nice big bowl and sprinkle some extra cheese on top. Mmmmmmm! Had this for dinner tonight and am considering round 2!
