Asparagus Gruyere Tart!

I found this recipe on Pinterest a couple of days ago and have been dying to try it. We were having dinner with friends tonight, and I thought it was the perfect time to make it! It was so easy to make and it turned out great! Here's how to do it:

Puff Pastry (I used ready made puff pastry - find it in the freezer section with ice cream/novelties)
1 1/2 C  Gruyere cheese, grated
1/2 Pound fresh asparagus - the thinner the better
Olive Oil
Salt and Pepper

The first thing you have to do is defrost your puff pastry - this only takes about 30 - 40 minutes. You can throw it in the fridge once it's thawed for up to 24 hours. I recommend thawing the night before you want to make it, then using the chilled puff pastry straight from the fridge.

Lightly score about an inch away from the edge all the way around, then pop into the oven at 400 degrees for 10-15 minutes. I did 15. Remove from the oven. Here's a tip: when you take it out of the oven, it will essentially be a big box of puff pastry about 2 inches tall. Don't worry - this is perfect.

Remove from the oven. You'll see the line around the edge you scored. In the center will be the "box" where the cheese and asparagus goes. First, cover with cheese, slightly pushing down to make the box in the center collapse (the edges will stand - this is how the "crust/edge" is formed). Then, lay down the asparagus tip to end. You'll want to cut your asparagus just shy of the width of the box in the center so it all fits. Don't be afraid to crowd them - you want 'em really close together. This is why the thinner ones work great.

Brush the asparagus with a little bit of olive oil (a little goes a long way!) and finish with salt and pepper. Remember that your cheese already has a healthy amount of salt, so you won't need a lot.

Put back in the oven until the asparagus is tender - mine took about 20 minutes.

Voila - you're done! Let it cool slightly before serving. I would suggest eating warm, but room temperature was also delish!
