Verdict - Margarita Popsicles

Margarita Popsicles

Well folks, this one was my first bust... =(

As excited as I was to try this recipe, I was skeptical about it actually working because we all know alcohol doesn't freeze. Unfortunately, I was right. The good news is it won't go to waste - margarita slushies are just as delish!

If you'd like to try your luck at these, here's what you'll need:

3/4 cup sugar
3/4 cup fresh lime juice
1/2 cup water
2 tablespoons fresh lemon juice
2 tablespoons fresh orange juice
2 tablespoons tequila
2 tablespoons orange liqueur
Kosher salt, for garnish

Special Equipment:
4 small cups (recommended: Dixie), 4 popsicle sticks

Combine sugar, lime juice, water, lemon juice and orange juice in a small saucepan over medium heat. Cook, stirring, until sugar dissolves. Remove from heat and allow to cool. Once cool transfer to a blender with tequila, orange liqueur, and lime wedge and process until smooth. Pour into the cups and cover the top of each cup with foil. Place the popsicle stick in center of cup (down through foil, which will hold it in place). Freeze until hard, preferably overnight.

Tips:
  • Even overnight, my popsicles didn't freeze
  • I blended the lime wedge into the mix per the recipe but found that it all floated to the top of the cup (or bottom of the popsicle, depending on which way you're looking) and did not taste very good. Once I scooped that out, the remaining slush was yummy!

My recommendation to you all would be that if you're in the mood for a margarita, save yourself some time and just make an old fashioned one. Cuervo and margarita mix works like a charm - every time!
